Italian Grilled Salmon
4 (4 oz.) salmon fillets Grilling planks, soaked (45min.)
¼ tsp. salt 4 T. Italian seasoning
2 T. sun dried tomatoes, minced 8 cloves garlic, minced
1 T. lemon pepper seasoning ¼ C. olive oil
Salt salmon. Mix Italian seasoning, garlic, tomatoes, lemon pepper and olive oil in a bowl. Cut slashes into top of each salmon fillet, place on plank. Spread half of the garlic mixture over the fillets. Set plank on the grill. Close the lid and grill 10 minutes. Lift lid and spread remaining garlic mixture over fillets. Then about 15 minutes more, or until the fish gets to 140º F.

Grilled Pork Chops with Apple & Leek Compote
4 pork chops Grilling planks, soaked (45min.)
Allspice-Mustard Rub:
½ tsp. ground dried mustard ½ tsp. ground white pepper
½ tsp. ground allspice ¼ tsp. salt
Apple and Leek Compote:
2 apples, cored and diced 4 leeks, sliced
1 T. butter
Mix rub. Cover each chop with rub. Lay pork on plank and grill 35 minutes on low. Next sauté apples, leeks, and butter on medium heat, for 10 minutes. When Pork gets to 160º F remove from grill and let rest for 5 minutes. Finally garnish with the compote. This is worth the wait!
